WideSky Posted December 21, 2023 Report Share Posted December 21, 2023 If you want tender buy it at Tony's then dry age in the fridge for a week or so; trim and cook. Be sure to get slightly bigger as you will be trimming the dry bit off. I cook up the trimmings and give to the dogs as a treat. A lot of beef here hasn't been aged as is done NOB so you may buy a nice piece but it cooks tough.
