More Liana Posted December 25, 2019 Report Share Posted December 25, 2019 Nixtamalization does not mean fully cooked. That process involves simmering dried corn for about an hour, in a mixture of water and calcium hydroxide, then left to cool and rest overnight, then thoroughly washed in several waters. The result is corn for pozole that is partially cooked, and as Bisbee Gal mentioned, needs to continue cooking for quite some time in the pozole broth.
