She drew up the document, figured the amount owed, and had us and the maid sign in her presence. A LAWYER told me many years ago (dealing with same situation) to ask each what THEY thought they should receive before ever offering your own calculations. If the answers are close, doing the correctly worded acceptance for them to sign on the day you pay is sufficient. If they aren't be assured greedy employees can and WILL go to the labour union people in Chapala (this maid did -- gardener no) and then you have to mediate. This January another person disgracefully declined to pay excellent maid of 12 years when employer moved away. I asked maid what she wanted. She was embarrassed to ask for even 1/4 of what was due.
