They cookup three or four master curry gravies and use them all week. The meats and or vegetable are cooked, and the gravy is added. Fast and easy, but still requires the skill to make a gravy which can carry the dish. Pakistani curries use this same technique except they tilt more to muslim tastes. Hindus will not eat beef nor pork. Pakistanis will eat beef but not pork.
