More Liana Posted January 23, 2013 Report Share Posted January 23, 2013 The frijol bayo is not the kidney bean, but they are what I use in place of kidney beans in American-style chili. They substitute fine, although they are much softer than kidney beans. You'll find them canned under the brand La Costeña. If you want to cook your own beans for red beans and rice, either dried flor de mayo or flor de junio would work--but neither is a red bean. The dried bean most frequently used in the Lake Chapala/Guadalajara area is the peruano, which is pale yellow when uncooked and beige when cooked. shirley Posted January 23, 2013 Author Report Share Posted January 23, 2013 Found some red kidney beans, dried, at the bulk store in Ajijic...sorry cannot remember the name of the store, it is the one on the carretera across from the Ajijic clinic with all the grains, beans and spices. Looking forward to getting my ham out and making some delish, spicy red beans and rice on the weekend! FYI made some beans and rice with the bayos canned beans and turned out really good too.
