  1. While we may have wandered off topic. I find the comments very interesting and quite often I like them better than the comments on the restaurant. A Belgium Fry!
  2. Virtually every fast food restaurant in the United States uses paper and cardboard only. As for the paper bags, in the states the grocery stores use a thicker more sturdy paper bag and there are not many problems with using them for vegetables including tomatos.
  3. One of my lunch specials was battered thick sliced bacon deep fried. Several places in Texas serve this.
  4. Insurance is a racket with many of the car rental companies. They will advertise a very low rate and than the insurance will come to four times this amount. I remember my first time here. I got a very good rate from a company for two weeks. I knew I needed mexican required insurance so I was prepared for this. I asked if someone else drove the car what happened. They said I needed additional insurance for this. What if there was an accident, who fixed the car, again more insurance. They told me I needed $10,000 on my credit card. I said why, they said in case someone stole the car. Again more insurance. I was quoted $200 for renting the car for 2 weeks, after insurance it came to over $800.
  5. I don't see a problem. We simply go back to using the old grocery store brown paper bags. They come in many sizes and a lot of stores in the states are already starting to use them again. They can be made of recycled paper so they are bioenvironmental friendly. If you have something wet you simply double bag the item.
  6. The hard fat of beef is called suet. In the old days the cafes used suet to grease their fryers when making hamburgers. They tasted great and I am sure led to hardening of your arteries. I have a recipe from my grandmother for making chili. It starts with 3 cups of suet. I have made it a time or two and everyone agrees it tastes great. I just don't tell them about the suet.
  7. If I have my choice between good escargot and a good hamburger. I'll take the hamburger!
  8. I have served Buffalo (Bison) in my restaurants. I would buy a buffalo and have the whole thing ground into minced meat for buffalo burgers. The buffalo is very lean so I would have to buy beef fat to mix with the buffalo to make the burger juicy. The buffalo meat is tough unless tenderized so I never bothered with the different cuts of the buffalo. One time I tried the steaks and if marinated not to bad but I preferred the beef.
  9. The Vegetable Peeler Scraper. Used a knife most of my life and didn't really like the rigid peeler. Once they made the blade flexible I really liked it and seldom use a knife anymore for potatos or carrots.
  10. I don't think you have received any real business advice. Personally I think a dry cleaning, laundry, clothing alterations business in Riberas would really go over good. Riberas is fast growing and there are many expats in the area. There is a dry cleaning in West Ajijic and laundry in San Antonio and various small alteration shops but the demand is there for a second business. Prices being charged are equal to some state side prices.
  11. Some of the members on this board probably know more about a restaurant than the owner does!
  12. A year ago I used the Doctor at the pharmacy nearest Chapala Plaza (lakeside) and was pleased. He was a young doctor who had been trained in Cuba. Had my ear cleaned and got a script for a rash. All very reasonable in cost.
  13. My wife is a Mexican Psychologist who had her own television show in Mexico City. She has several clients Lakeside but at the moment is only doing consulting by Skype' Maybe option if your neighbor doesn't find someone.
  14. You need to get room near Coyoacan it use to be the center of Mexico City. One of the oldest churches in America is there. It is a beautiful park with many restaurants and things to see. You can catch a bus in Coyoacan similar to the English open topped buses. You buy a bracelet and its good for the day. They take you to many tourist spots and you can get off the bus and stay as long as you want at any of their stops than get on the next one of their buses that comes along. They have many buses so you seldom have to wait more than 15 minutes. It is a cheap way to see a lot of the leading things to see in Mexico City. I enjoyed the open top as you can get a really good view of Mexico City. Bring a hat or wear sun screen!

  16. I know you do not want to do this but your only real solution is to to scrape the ceilings back to base and start over. The suspended ceiling will look out of place in a Mexican casa and hurt your resale price if you one day want to sell casa.

  20. I don't know what civilized countries you've been in but in Europe where dogs in restaurants is legal. The people do not bring dogs when they dine. You also said you had a restaurant in Chapala and kept your dog with you in the kitchen. This is a total disrespect for Mexican law and your customers. I believe we will never get the dogs out of Lake Chapala because of attitudes like yours but this does not mean I have to like it.
  21. If you get hunger for meat during Lent or Holy Week remember the Catholic Church has issued a Special Dispensation. You can eat Capybara.
  22. It is a shame some "entitled" expat's are forcing restaurant's to make business decision's about breaking the law and allowing dog's in their restaurants. I think maybe if we print signs and distribute to restaurants saying this is a pet free premise or zone the expats will take the hint. Otherwise the restaurant could simply point to the sign. If a majority of restaurants do this the dog owners cannot discriminate against one. I think most restaurant owners are afraid to confront the dog owners and they should not have this burden put on them. I know their have been many posts on this forum about the dog problem but it is getting worse. Anyone else have a good idea?
  23. Thanks for the info makes a little bit more sense. Hopefully a solution can be found to solve the problem internally in Mexico.
  24. I don't get it. Thousands of dogs are euthanized in shelters in the USA every day and you are paying for dogs to be sent there. For every dog you send this means a USA dog has less chance of being adopted and saved. Much better you find homes in Mexico or establish kennels for them.
  25. Again its probably the igniter needs to be replaced. In the states one costs around $60 plus service call.
